It Cake made with la gai is the very special cake of Binh Dinh. Its shape is very special. Looking at some cakes in the disk, we may imagine them the ancient Egyptian pyramid located in the desert. The cake has cone shape, square bottom, sharp edge pointed up to the top under the vision of an artist. With the eyes of ordinary people, it look like the bud of a young girl.

Wrapped in banana leaf, the cake is smooth, soft and black as girls’ hair. It is meticulous to make this kind of cake. First, find “la gai”, then wash the leaves, boil, drain and beat them in the mortar.  Then the sticky dough mixed with black sugar into the mortar. Oil should be added to avoid it from being sticky. The fillings of the cake vary depending on each local region can be green beans, black beans or coconut cooked with sugar, sometimes fried shrimp with meat, which are salty cake. Banana leaves are cut in circle shapes, heated by the fire to be soft, applied with the oil and packed into square pyramid and then steamed.

The cake is not sticky. The sweet taste of sugar, the fresh flavor of sticky rice, beans and the pungent flavor of ginger, create a delicious and very personal feeling. You can eat much without fear of abdominal pain. According to the explanation the local people, in “La gai” leaf and ginger exists remedy for curing abdominal pain.

In Tam Quan, the north Binh Dinh, the filling is made from minced coconut mixed with sugar and oil. In the city, it is mixed with a little vanilla, the cake smells better, however, it loses the rural flavor.

People living near rivers or the sea make fillings with shrimp and pork. Sweet shrimp stirred with pork, a little salt, onion, pepper has seaside scent.
