Cho Huyen Fermented pork roll is a famous speciality of Binh Dinh that has been in poetry – “Welcome to my hometown Vinh Thanh to eat Cho Huyen Fermented pork roll and watch Tuong drama.” Over centuries, Cho Huyen Fermented pork roll not only survives but develops more powerfully than before. Cho Huyen Fermented pork roll accompanies with Tuong drama on the land of Vinh Thanh, Phuoc Loc, Tuy Phuoc, which is a nice surprise as this small village is home to two famous things:

one is the cuisine and the other is Tuong Drama with the name of the celebrity Dao Tan. And it is reasonable that the night life in the past with the old Tuong drama always accompanied with variety of café with  grilled meat rolls, half-hatched eggs, fermented pork roll, grilled chopped meat with wine to serve those in hunger during time of Tuong drama.

Cho Huyen fermented pork roll has good reputation of material and sophisticated making procedure. The lean pork is cleaned with cloth, sliced ​​and put in the blender then grinded as hard as possible with garlic, salt, sugar. The ​​pork skin is thoroughly sliced, cut into pieces and mixed in the mixture. The pig’s skin is cut into small strings and mixed with pepper. The mixture is then wrapped in guava leaf layer, then banana leaf layer into the square shape. Finally, it is wrapped with the plastic layer, Then hung in cool, well-ventilated place. In sunny season, it is usually eatable on the fifth day.

 


 

Cho Huyen fermented pork roll is pink with sweet, sour and salty flavour. Soy sauce, chili sauce and garlic can be used to add more flavor. The sour meat of the fermented pork roll is both delicious and nutrients thanks to the fermentation process. Raw guava leaves can be eaten to help the intestinal tract. It is best to be served with Bau Da, the famous sparkling wine of Binh Dinh. You will find it as delicious as royal dishes in ancient time!

 

This specialty can be bought on the national highway in Phuoc Loc. It is widely sold in Quy Nhon City. This unique and delicious dish is also preferred by many people in different corner of Vietnam.
